Description

You can make our Easy pancake in under 5 minutes and have a good breakfast. The ingredients used are few and you probably have a lot of them in your cupboard.

It’s a simple recipe, you won’t need to hunt down any unusual ingredients, and it’s one of my favourite Nigerian foods for breakfast – and I’m betting you will love it too.

  • 500 grams Flour (All purpose flour 500g)
  • 2 Eggs (2 large eggs)
  • 50 grams Sugar (50g of sugar)
  • 1 teaspoon Baking Powder (1 leveled teaspoon of baking powder)
  • 1/2 teaspoon Salt (1/2 teaspoon of salt)
  • 1 cup Milk (1 cup of milk)
  • 1 tablespoon Vegetable Oil (1 tablespoon of vegetable oil on each scoop.)
  • Honey or Maple Syrup (Assorted topping such as honey or maple syrup)
Methods
  1. Mix Dry Ingredients

    Mix all dry ingredients, All purpose flour, salt and sugar. Set them aside.

  2. Whisk Milk and Egg And Add Ingredients

    In a medium bowl whisk together milk and egg. Add dry ingredients to the milk mixture, do not over-mix. You can mix it well without lumps if you are a pro. ( a few small lumps is fine).

  3. Spread Vegetable Oil

    Spread 1 teaspoon of vegetable oil on your frying pan, leave it for a few seconds to be hot, then scoop your paste into the hot oil.

  4. Cook for sometime

    Cook for 1 to 2 minutes until the surface of the pancake has some bubbles and a few bursts. Flip carefully with a thin Spatula and cook carefully until browned on the other side 1 to 2 minutes.

  5. Continue with more oil and remaining batter.

    Once the pancake is ready, Serve it with honey or maple syrup
